Altos de Maria is a regional blend from 6 producers in Santa Maria, Northern Huila. This part of the region has a rich history of agriculture that stems from the indigenous tribes that settled here long ago in search of gold. The mountainous landscapes and micro-climate here provide high altitudes and an abundance of water, which makes it an ideal location for growing coffee. In fact, coffee is now the mainstay of Santa Maria and there is an annual specialty coffee fair hosted here.


Each producer has pulped cherries and fermented parchment in tanks for 18-28 days to remove the mucilage. The parchment is then taken to patios where it is sun dried until the right moisture content is achieved. Once the Caravela team have cupped all of the lots, the proportions of each lot are determined and then blended to achieve a consistent flavour profile.


The extended period of fermentation in this fully washed blend gives it a dried berry quality when roasted, which we couldn’t get enough of. Altos de Maria is a complex coffee that has citrus fruit acidity, currant-like sweetness, and lingering dark chocolatey notes in the aftertaste.
